Ken’s Fruitcake is a rich and wholesome wonder, made with the finest ingredients available. Home-crafted, Ken’s Fruitcake is a luxury item made to be enjoyed on festive occasions. They are created from recipes handed down in the European baking tradition.

Handcrafted in small quantities, this gastronomic labour of love boasts nuanced aromas of dark berries with hints of spirits, syrups and spices. Each loaf weighs 900 grams. Each is aged for months, allowing for the natural fruit juices to combine and transform sugars into flavors. Only through the aging process can Ken’s achieve the subtle savors, dark semi-moist texture and consistency akin to mature Ports or Classic Vintages.

During the era of block-ice refrigeration for perishable food, rendering Pork Fat to Lard for baking was common. Over time, growth in Food Service Industry lead to creation of processed fat substitutes and, Lard often was replaced by lighter, hydrogenated (trans) fat material. In response to several queries for a return to an Original Classic, I’m pleased to offer the Old Fashioned Fruitcake with Maple and Lard. No doubt, had Grannie been around; she’d of asked me, “why this one took so long” to remake … and so…. I’ve rendered the Leaf Fat of a Mangalista Barrow . That which surrounds the Omnivore’s kidneys. With the exception of the birthing period, life is outdoors 24/7 on a non-certified- organic Holistic Farm. Consequently, Kens Old Fashioned Fruitcake variety is non-compliant at 92%. I’m certain you will enjoy it!

A winning combination of figs from the Joachim Valley, pears from Washington State and whole Nigella seed from Egypt. Our friends to the south produce the best dried figs and pears I'm aware of. I've thrown in organic whole Nigella seed to round out the flavor and texture. It's my most popular cake. I bet Grannie would have wished she'd thought of it herself!

The Saskatoon are soaked in Grand Marnier for months, liberating their nutty aroma. Combined with rum-soaked Aronia, it will send your taste buds into overdrive! Grannie would be hitching her skirt and kicking up her heels. I’m certain she’d approve of this one!
